Ingredients
Pasta
400g Macaroni (or any short pasta)
Boiling water + salt
Cheese Sauce
3 tbsp butter
3 tbsp flour
3 cups whole milk (approx. 750ml)
2 cups shredded Cheddar cheese
1 cup mozzarella or Gruyère cheese (optional, but adds stretch)
½ tsp salt
½ tsp black pepper
¼ tsp paprika (optional)
A pinch of nutmeg (the secret to the flavor) )
Step-by-Step Instructions
Boil the Pasta
In a large pot, bring water to a boil with salt.
Add the pasta and cook until al dente (not completely soft).
Drain and set aside.
Prepare the Cheese Sauce
In a saucepan over medium heat, melt the butter.
Add the flour and stir continuously for one minute (without browning).
Gradually add the milk, whisking constantly to prevent lumps.
Let the sauce simmer until it thickens and becomes smooth.
Add the Cheese
Reduced heat.
Gradually add the grated cheese, stirring until completely melted.
Add the salt, pepper, paprika, and nutmeg.
Important: Do not add the cheese while the heat is high, or the sauce will separate.
